Corn on the cob is a classic summer dish, but have you tried taking your corn off the cob recently? Grilled corn salad is a delicious summer recipe that is as refreshing as it is delicious. Give this recipe a try and spice up your next dinner with family and friends!
Ingredients:
- 6 ears of corn
- 2 tablespoons of canola oil
- Salt
- Pepper
- 2 cups of diced tomato
- 1 chopped red onion
- 4 scallions finely chopped
- 2 cups arugula
Dressing:
- 1 juiced lemon
- 4 tablespoons olive oil
- Salt and pepper
Rub corn with the olive oil and season it with salt and pepper. Grill corn for 7 minutes, or until lightly browned. Remove corn from grill and allow for it to cool. Remove the kernels from the cob and place in a large mixing bowl along with the tomato, red onion, scallions and arugula.
Combine and whisk the lemon juice, olive oil, salt and pepper. Mix it into the corn salad as the dressing.
